Humus

Ingredients

  • 1 (15 ounce cans) chickpeas, drained with liquid reserved
  • 2 ounces chickpea liquid, or more, as needed
  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 roasted garlic cloves
  • 1/2 teaspoon cumin
  • 14 teaspoon kosher salt

Procedure

  1. Warm the chickpeas (microwave 30–60 sec OR simmer 3–4 min).
  2. Warm beans = smoother hummus.
  3. Add to a blender or food processor with:
  4. tahini, olive oil, 1–2 tbsp aquafaba, salt
  5. Blend 30–60 seconds. Add aquafaba 1 tbsp at a time until smooth.
  6. Add lemon (if using) a little at a time, taste and adjust.
  7. If needed, blend another 1–2 minutes for extra creaminess.
