Humus
Ingredients
1 (15 ounce cans) chickpeas, drained with liquid reserved
2 ounces chickpea liquid, or more, as needed
1/4 cup tahini
1/4 cup olive oil
1/4 cup lemon juice
1 roasted garlic cloves
1/2 teaspoon cumin
14 teaspoon kosher salt
Procedure
Warm the chickpeas (microwave 30–60 sec OR simmer 3–4 min).
Warm beans = smoother hummus.
Add to a blender or food processor with:
tahini, olive oil, 1–2 tbsp aquafaba, salt
Blend 30–60 seconds. Add aquafaba 1 tbsp at a time until smooth.
Add lemon (if using) a little at a time, taste and adjust.
If needed, blend another 1–2 minutes for extra creaminess.
