Chile Rellenos Batter (Capeado)

Ingredients

  • 4 large eggs, separated
  • ¼ tsp salt
  • 1 Tbsp all-purpose flour (optional but traditional)
  • 1 tsp cornstarch

Method (This Order Matters)

  1. Beat the egg whites
  2. Whip whites with salt to soft peaks - They should stand but still look glossy
  3. Beat yolks lightly
  4. Fold gently into whites
  5. Fold in 1 Tbsp flour
  6. Fold in 1 Tsp corn starch
