Chocolate Sponge Cake

  • 3/4 cup (100 g) cake and pastry flour
  • 2/3 cup (140 g) granulated sugar
  • 1/4 cup (30 g) Dutch process cocoa powder
  • 1/2 tsp (2.5 g) baking soda
  • 1/4 tsp (1.25 g) salt
  • 1/4 cup (60 g) cool unsalted butter, cut into pieces
  • 1/4 cup (60 mL) hot, strongly-brewed coffee
  • 1/4 cup (60 mL) milk
  • 1 large egg, at room temperature
  • 1 tsp (5 mL) vanilla extract
