Chocolate Sponge Cake
- 3/4 cup (100 g) cake and pastry flour
- 2/3 cup (140 g) granulated sugar
- 1/4 cup (30 g) Dutch process cocoa powder
- 1/2 tsp (2.5 g) baking soda
- 1/4 tsp (1.25 g) salt
- 1/4 cup (60 g) cool unsalted butter, cut into pieces
- 1/4 cup (60 mL) hot, strongly-brewed coffee
- 1/4 cup (60 mL) milk
- 1 large egg, at room temperature
- 1 tsp (5 mL) vanilla extract
