====== Humus ====== ===== Ingredients ===== * 1 (15 ounce cans) chickpeas, drained with liquid reserved * 2 ounces chickpea liquid, or more, as needed * 1/4 cup tahini * 1/4 cup olive oil * 1/4 cup lemon juice * 1 roasted garlic cloves * 1/2 teaspoon cumin * 14 teaspoon kosher salt ===== Procedure ===== - Warm the chickpeas (microwave 30–60 sec OR simmer 3–4 min). - Warm beans = smoother hummus. - Add to a blender or food processor with: - tahini, olive oil, 1–2 tbsp aquafaba, salt - Blend 30–60 seconds. Add aquafaba 1 tbsp at a time until smooth. - Add lemon (if using) a little at a time, taste and adjust. - If needed, blend another 1–2 minutes for extra creaminess.
